This bagel sandwich was born at the beginning of quarantine when hubby was looking for something that will hold him until the afternoon because his schedule was jam-packed with virtual meetings.

Despite its simple ingredients and easy instruction, this sandwich is full of flavors! Chewy bagel, creamy avocado, savory fried eggs, and salty cheese hit all the right notes for a perfect breakfast! Shall we get started?!

Ingredients in Avocado Fried Egg Bagel Breakfast Sandwich

  • Bagel - I find any bagels that have savory flavor work in this recipe. I like everything, onion, and sesame bagel.
  • Avocado - You can slice or mash your avocado. But sliced avocado tends to slide out when I take a bite of the sandwich. So I mashed mine.
  • Everything Bagel Seasoning - I use Trader Joe's brand but you can find other options online or at grocery stores.
  • Fried Egg - I usually like my egg runny but for the sandwich, I like it to be over hard. This makes the sandwich less messy to eat. But if you like your egg sunny-side-up, no problem! You can use a fork and knife to enjoy your sandwich.
  • Swiss cheese - The mild, slightly sweet, and nutty flavor goes really well with the rest of the ingredients but you can use other cheese!

Substitutions for the sandwich

  • Bread - You can use sandwich bread, sourdough, or baguette. If you are using a sourdough, you can make it into an open-face sandwich. A hearty bread such as a baguette is also great in holding all the yummy ingredients.
  • Protein - I'm using fried egg for this recipe but my husband (an omnivore) has added deli meat to make the sandwich more filling. It's very easy to find much delicious breakfast sausage options these days for vegan, vegetarian, and omnivore and they are a great addition to this recipe.
  • Cheese - Swiss cheese is what I use for this recipe but you can pretty much use any cheese for this recipe. I have tried it with cheddar, mozzarella, and Colby jack cheese. They were all delicious!

Helpful Tips on Avocado Fried Egg Bagel Sandwich

  • You can either smash your avocado directly on a toasted bagel or make chunky guacamole and add it to your sandwich. Slice avocado works too but they tend to slide out when you take a bite.
  • I like to add my cheese on top of the cooked egg so it has a chance to melt a little. What I do is as soon as I flip the egg over to cook the other side, I add the cheese so it has some time in the pan to get all melty and gooey.
  • If you don't want to fry an egg, you can scramble your egg. You can directly add the cheese of your choice to the scrambled egg.

Ingredients

Scale

  • 2 bagels of your choice (I like everything or onion bagel for this recipe)
  • 2 fried eggs (seasoned with salt, pepper, and red pepper flake (this is optional))
  • 2 slices Swiss cheese (or other cheese of your choice)
  • 1 avocado
  • Everything bagel seasoning

Instructions

  1. Toast your bagel to your liking.
  2. While you are toasting your bagel, fry 2 eggs. Season with salt and pepper. If you like little kick, I recommend some red pepper flakes.
  3. When the eggs are cooked almost to your liking, place a sliced cheese on top. Turn off the heat and let the cheese melt a little.
  4. On your toasted bagel, place some avocado slices. I mashed mine so the avocado wouldn't slide out when I bite into the sandwich.
  5. Sprinkle some Everything Bagel Seasoning.
  6. On top of avocado, place the cooked egg and cheese. Top it with the other half of your bagel.
  7. Enjoy right away.

Notes

  • Red pepper flake is totally optional. I personally love spicy food so I wasn't shy about it but it is optional ingredient.
  • You can cook your egg to your liking. I like mine to be not runny in this sandwich just so that it would be less messy to eat but if you like your egg over easy, just use a fork and knife to eat this delicious sandwich.
  • You can use whatever cheese you want!
